I would suggest a small shield or the cestus in the left hand so you can parry with L2 while still having your weapon in the right hand to attack. Also, the dogs can't be parried, only 'weapon attacks' can, and not all of them. Elenora's does fire and physical with added bleed build up, but the bleed build up is half as much as the Godskin Peeler. That is why you see it less, you burn your enemies to death before they bleed out. you can add bleed affinity to the peeler and not worrying about the rest.

You don't even need both. Just spam L2 with the poleblade and it's easy procs constantly.Godskin twinblade + knight twinblade if you want higher per hit damage and mobility of bloodhound step, or Eleonora + Godskin if you want ridiculous weapon art that easily break poise on bosses. Eleonora has worse scaling than other two and only half bleed buildup as blood infusied twinblades. But it's weapon art does increased blood buildup ...The arcane scaling on it is currently broken so its not doing the intended damage, that being said it is a pretty fun weapon and the bleed procs can still carry it damage wise.
